Dulce de Batata

- 4.5 lbs of sweet potatoes
- 4 1/4 cupsof water
- 6 1/2 cups of sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla
- Peel the sweet potatoes and cut them in to small slices.
- Boil them in a small casserole dish with the lemon juice (this is to keep them from darkening).
- In a big casserole dish put the water, suger and the vanilla. Boil it at a low temperature for ½ hour, this is to prepare the syrup.
- Take the sweet potatoes, drain them, add them to the large casserole dish full of syrup.
- Let them cook until the syrup becomes thick and the sweet potatoes are cooked.
- Remove the dish from the heat.
- Add the cinnamon to the dish.
- Let the mixture cool before serving it. It can also be bottle or packaged.
